1 pound lean ground beef
1 cup diced onion
1 can tomatoes with green chilies
1 can black eye peas — 70 grams carbs; 18g fiber
1/2 cup shredded cheddar cheese
1 each salt and pepper — to taste
How to Prepare:
Brown ground beef and onions until cooked lighty.
Drain well and add everything but the cheese.
Reduce heat to low, cover and simmer 15 minutes.
Serve with cheese sprinkled over top.
