Bruschetta Style Tomato Turkey Salad

Serves: 1 or 2
Carbs Per Serving: approx 8 (w/o subtracting fiber)
Prep Time: 10 minutes
Effort: Easy
Ingredients:
1 cup ground turkey
1 cup mixed lettuce
1 tomato
4 or 5 kalamata olives
salt and pepper
1 or 2 T olive oil
1 tsp crushed garlic
1 tsp basil paste (or a few leaves of finely chopped fresh basil)

How to Prepare:
Dice the tomato and place in a small bowl. Add chopped olives, olive oil, garlic, basil, and salt and pepper to taste. Brown the turkey mince in a saucepan. Add the tomato mix to the turkey and mix together. Serve over a bed of mixed lettuce. So EASY!!! Tastes as good as italian restaurant food.

Make sure no bones are left and put all meat back in pot. Add remaining ingredients and simmer for 1/2 hour and soup is on.

Dijon mustard 1/2 tsp. coarse salt 1/4 tsp. freshly ground pepper 1/8 tsp. cayenne pepper How to Prepare: Preheat oven to 350 degrees F. Lightly coat a quiche pan or a 1 1/2 quart baking dish with a nonstick vegetable spray. Set aside. Melt butter in a medium skillet over medium heat. Add the onion and saute' for 3 min.,stirring occasionally. Add the mushrooms and cook for 3 min. or until softened, stirring occasionally. Set aside. Combine the eggs,egg yolks,half-n-half and sour cream in a medium bowl. whisk until well blended. Add the cooked onion mixture and the rest of the ingredients and blend well. Pour the mixture into the prepared pan. Bake for 40 to 45 minutes or until set in the center and golden brown on top. Cool at least 10 minutes befor serving.

    • Carbs Per Serving: 20 Prep Time:15 Effort: Easy Ingredients: 2 heads of butterhead lettuce 6 oz. Of cold leftover steak, thinly sliced 8 cherry tomatoes, sliced in half 6 oz. Blue cheese 10 tbs heavy cream 2 tbs mayonnaise 1 tbs vinegar (optional) How to Prepare: Beat the heavy cream and mayonnaise together in a small mixing bowl. Crumble half the bleu cheese into the mixture (reserving the other half for a garnish) and stir a few times. Add a drizzle of the vinegar if it is too thick. Chill for at least two hours. (The longer it chills, the more intense the flavor becomes.) Slice the butterhead lettuce in wedges (or tear into pieces if you prefer) and place on four salad plates. Pour the bleu cheese dressing over the lettuce. Arrange strips of the cold steak (cold filet is outrageously good in this dish!) and four cherry tomato halves over the lettuce. Sprinkle the reserved bleu cheese on top. Give each plate a grind of fresh pepper and serve immediately.

Mix with the avocado to make a green egg salad. Add salt and pepper to taste. (You can also add a little cream.) Lightly fry the slices of ham and serve with the egg salad. I like to use the egg salad chilled and roll it up in slices of cold ham like a crepe. The kids will love it!

    • Perhaps the most widely known of all low carb diets is the Atkins diet. Created by Dr. Robert Atkins in the 1970s the Atkins diet is considered by some to be the most extreme low carb diet plan. Dr. Atkins believed that nearly all obesity is caused by overactive insulin production and not by overeating. He believed that overeating could be caused by carbohydrate addiction and that most overweight people actually ate less than their slim counterparts. However, they crave and eat carbohydrate, which raises their insulin levels and suppresses fat burning. Dr. Atkins is a proponent of ketogenic fat burning, which is achieved by eating fewer than 40 grams of carbohydrate each day. He advises his followers to buy testing strips so that they can measure the amount of ketones in their urine daily to confirm that they are in a constant state of ketosis. He also recommends the use of dietary supplements to help balance nutrition and the bodies systems. The Atkins Diet is divided into four stages: the Induction diet, the Ongoing Weight Loss diet, the Pre-Maintenance diet, and finally the Lifetime Maintenance diet. The Induction diet is very strict as far as carb elimination (20 grams or less per day), but generous in the allowance of fat and protein. It should be noted that low starch vegetables are the recommended source of carbs. This phase of the diet lasts 14 days and is followed by the Ongoing Weight Loss diet (OWL). The OWL phase allows for the reintroduction of certain good carbs but the levels are kept below 40 grams a day. Dieters stay on OWL until they reach their ideal weight.   • Carbohydrate Addict’s Diet

    • Husband and wife scientist team Drs. Rachael and Richard Heller introduced the term "Carbohydrate Addict" in their 1993 book The Carbohydrates Addict's Diet. The idea is that some people are addicted to carbohydrates just like alcoholics are addicted to alcohol and drug addicts are addicted to drugs. This addiction causes strong cravings, insulin resistance and weight gain. Dr. Rachael Heller developed the diet to eliminate her own obesity and had maintained her dramatic weight loss for more than twenty years by the time the first book was written. The Heller's believe that insulin imbalance caused by carbohydrates causes the body to crave more food and interferes with serotonin release that would signal that the body is full. This leads to overeating and weight gain. The Heller's recommend that the carb addict should limit his or her carb intake to a "reward meal", eat three times per day and avoid snacks until the person is out of the weight loss phase of the diet. In addition to the diet plan, the Hellers also cover psychological triggers that can cause carb addicts to binge on carbs and gain weight. They encourage dieters to identify personal emotional triggers and how to avoid these triggers to help lose weight. One of the most important theories of this diet is that being overweight is not the fault of the obese person. Why? Because the person's biology and the addictive power of carbohydrates is working against them. Like all other low carb plans, the Hellers recommend that processed foods and many types of sugar should be avoided. However, they also state that some starchy carbs should be eaten with reward meals if desired so that the dieter will be more likely to stick with the diet for the long-term.   • South Beach Diet

    • Developed by Dr. Arthur Agatston, The South Beach Diet touts itself as teaching dieters to eat the right carbs and the right fats. The diet has three phases. In the first dieter's banish their bad carb cravings and induce rapid weight loss. In the second phase, some types of carbs are reintroduced and weight loss is slower. The final phase is the "Diet for Life" phase. This is the maintenance diet and will be followed for the rest of the dieter's life. If at any time the dieter begins to gain unwanted pounds, then he simply goes through the induction and pre-maintenance phases again. The first phase emphasizes protein from high-quality meat sources with lots of fresh vegetables and salads with real olive oil dressing. Bread, rice, pastas, potatoes, baked goods, soy milk and cheese, yogurt, beets, carrots, corn and all fruit are forbidden in the 14-day induction phase. This includes all candy, cake, ice cream and sugar, plus meats that are cured in sugar or molasses. The diet encourages three meals a day with a mid-morning and a mid-afternoon snack. There is also a daily meal plan. This plan includes strict portion control in the induction phase. An example of a daily snack is 20 peanuts. And 30 pistachios is another snack option. Unlike Atkins, unlimited protein consumption is not advised or allowed on this diet. However, during the later phases of the diet some of the strict portion control does end and dieters are able to eat until satiated. Some of the forbidden foods can be slowly reintroduced, sometimes in modified form in the second phase of the diet. The second phase lasts until the dieter's goal weight is reached.   • Basic Meat and Eggs or Tofu

    • Carbs Per Serving: 7g total Effort: Easy Ingredients: ½ pound chicken, beef, or ham – cooked and cut according to preference OR 12 ounces tofu, firm drained very well OR 6 large eggs 2 tablespoons mayonnaise 1 tablespoon yellow mustard ¼ cup chopped onion ¼ cup chopped celery 2 tablespoons capers – drained 3 tablespoons dill pickle – chopped How to Prepare: Note: chop meats to desired chunkiness after cooking. Leftovers work great! In a large bowl, mix desired main ingredient with remaining ingredients. Season to taste with salt and pepper. I like to add a little horseradish sauce to the ham or roast beef salad for some zip. For egg salad: Mix everything but the eggs well. Chop eggs to desired chunkiness and fold into mixed ingredients. Add a few drops of tabasco sauce if desired. A squeeze of lemon also goes well. For eggless salad: Mix everything but the tofu Squish tofu with your hands or with a fork until it breaks apart. Fold in with remaining ingredients. Eggless salad should sit for at least an hour, refrigerated, before serving. Lemon or a few drops soy sauce work great in tofu based salads. **personal note*** Process meats find in a food processor for more of a ‘spread’ consistency. Don’t process with the remaining ingredients until you get the meat broken down almost to the size you want. The spreads work very well on lettuce leaves for roll-ups The chunky version works great over lettuce for a salad meal. NOTES : Counts for tofu and eggs not included in totals… tofu is 10 carbs, eggs 3.6.

    • Carbs Per Serving: 2.6 Prep Time: 2 1/2 hours Effort: Average Ingredients: 2 tbsp. vegetable oil 1 1/2 lbs. stew meat 2 tbsp tomato sauce 2 c. water 1 tsp. salt 2 tbsp. chopped onion 1/4 c. chopped green pepper 1/4 c. chopped eggplant 1/4 c. zucchini, cubed 1/2 c. spinach How to Prepare: Heat oil in heavy pot. Brown meat on all sides. Push to side of pot. Add onion, cook 2 minutes. Add water and salt. Simmer 2 hrs. Add green pepper, eggplant, and zuchinni. Simmer 10 min. Spoon in tomato sauce and spinach. Cook 7 more min.

    • Serves: 2 Carbs Per Serving: 5.85 total Effort: Easy Ingredients: 3 eggs 1 Tbsp butter or olive oil 2 Tbsp chopped onion 2 Tbsp green bell pepper 1 Tbsp red bell pepper 2 ounce cheddar cheese 2 Tbsp chopped tomato (or salsa) 1 Tablespoon bacon bits How to Prepare: In a small pan, melt butter (or add olive oil), add onion and bell pepper. Cook till veggies are tender, add eggs. Scramble till eggs are partially set, add the cheese. Once done, remove from pan. Sprinkle the tomato and bacon bits over the top. Very pretty and delicious eggs!
  • Cajun Stew

    • Serves: A lot. Carbs Per Serving: Mostly from tomatoes (net 3 per 1/2 cup) Prep Time: 30 min Effort: Easy Ingredients: 2 large cans peeled crushed tomatoes 1/2 can tomato paste (small) 3/4 lb ground beef 8 hot italian sausages diced green pepper diced onion oregano parsley thyme hot sauce red pepper flakes salt and pepper How to Prepare: Place tomatoes in tall pot (make sure you check the label for no sugar added, net carbs should be 3 for a 1/2 cup serving), add the tomato paste, spices and diced vegetables while browning the ground beef and sausages. Prick the skins of the sausages as they brown. When the meat has been browned, drain well, add to the stew pot. Simmer for about two hours until the meat is tender. Depending on seasoning, stew will be tangy but not too hot.
  • Broccoli, Olives, & Egg Salad

    • Serves: 4 Carbs Per Serving: ? Prep Time: 10 minutes Effort: Easy Ingredients: Fresh broccoli florets Boiled eggs Green olives Red Onion Mayonnaise Black Pepper Paprika Salt How to Prepare: Quantities of everything according to taste. I would use I a bunch of broccoli, 3 eggs chopped in large pieces, ½ cup olives, ½ large red onion chopped. The rest of the ingredients really depend on your preferences, but black pepper really makes this salad. Mix everything together and coat well with mayo. Chill and serve.
  • BLT Ranch Omelet

    • Ingredients: 2 large eggs 1 tablespoon water 2 tablespoons shredded cheddar cheese 3 slices bacon -- cooked crisp and crumbled 1/2 small tomato -- sliced thin 1/2 cup shredded lettuce 1 tablespoon mayonnaise 1 tablespoon salsa How to Prepare: Beat eggs with a fork and add water, beat again to mix. Add salt and pepper if desired and beat into egg. Heat bacon drippings and pour egg mixture into small, non-stick pan. Cook over low heat until set and no longer wet looking. Pile bacon, cheese, lettuce and tomato on one half and flip the other half over to cover. Remove from heat and cover pan for 30 seconds to melt cheese. Mix salsa and mayo and spread over omelet. *Lettuce can be placed on plate under omelet instead if desired.

    • Serves: 6 Carbs Per Serving: 5.33g Effort: Easy Ingredients: 1 tablespoon cooking oil 10 ounces frozen broccoli spears 1 tablespoon water 4 ounces button mushrooms -- drained 6 eggs 2 tablespoons heavy cream 3 tablespoons water 1 1/2 teaspoons Italian seasoning -- crushed 6 thin tomato slices -- about 1 med tomato 1/4 cup grated Parmesan cheese How to Prepare: In a 10-inch omelet pan or skillet over medium heat, combine oil, broccoli, and water. Cover and cook just until broccoli can be broken apart with a fork, about 3 minutes. Take pan off the heat. Arrange broccoli spears so stems point to center of pan. Set mushrooms, rounded sides up, between broccoli spears. In medium bowl, thoroughly blend eggs, milk, and seasoning. Pour over broccoli. Cover and cook over medium heat until eggs are almost set. Remove from heat. And Enjoy.
  • The Glycemic Index Diet

    • Written by Rick Gallop, a former President of The Heart and Stroke Foundation of Ontario, The Glycemic Index (GI) Diet claims, "if you can understand a traffic light, you'll understand this diet". Gallop divides food into three groups based on their glycemic index, how fast they cause spikes in blood sugar levels. He separates food into green light, yellow light and red light foods. Glucose is set at a GI level of 100 and all other foods are compared against it. Red light foods should be avoided, yellow light foods are avoided during the initial weight loss phase and eaten occasionally during the ongoing maintenance phase and green light foods should form the basis of your diet throughout. No special foods need to be purchased. Simply look up where your favorite foods fit in the plan, eat green, sample some yellow and avoid red. Period. Gallop says dieters should expect to lose one to two pounds per week and need not start with a crash diet. While this is a low carb diet it is not as high protein as most of the other diets and encourages dieters to cut fats as well as carbs. He also encourages exercising for 30 minutes each day and eating three balanced meals that include carbs, proteins and fats. According to Gallop, followers of the GI diet should consider it a lifestyle change that they will adhere to for the rest of their lives, not a diet. It isn't easy, though.   • Yummy Chicken Taco Salad

Sautee about ¼ of the onions. Add the shredded chicken, cumin and chili powder and Rotel. Simmer for approximately 20 minutes, stirring occasionally. Meanwhile, shred lettuce and place in bowls. When Chicken mixture is done, place a heaping on top of the lettuce and cover with cheese, olives, sour cream, the remaining onions. Combine salsa ingredients in blender. Add to salad.. this will be used as your dressing. Enjoy!
