6 Eggs
6 Slices Virginia Ham
Butter as needed
6 mushrooms chopped
3 scallions chopped
3 tbs sour cream

How to Prepare:
Sauté mushroom and scallions in butter till tender. Add sour cream and cook over medium heat till thickened. Coat muffin tin with butter and line with Virginia ham, place 1 tbls spoon of mushroom mixture over ham and break egg over mixture. Bake in 350 degree oven for approx 10 minutes.
