High Rise Low Carb Bread

1 1/8 cups water
3 Tbsps olive oil
1 teaspoon salt
3/4 cup wheat gluten flour
1/4 cup oat flour
1/4 cup flax seed meal
1/4 cup wheat bran
1 cup soy flour
1 Tbsp artificial sweetener
1 teaspoon sugar
1 package quick dry yeast

How to Prepare:

You can knead the dough by hand (about 10 minutes) or place the ingredients (in the same order as listed above) in a bread machine.

In the bread machine:
Set to Dough setting and stop it after the kneading cycle is completed. Do not let it rise in the breadmachine.

Remove dough and place in a long narrow oiled bread pan or two roll it over.
Cover with a clean light cloth and let rise for about an hour or until at least double, or triple in size.
DO NOT PUNCH DOWN.. (single rise only).

Bake in preheated 375o oven for 40- 45 min
