Ingredients:
1 pound ground beef
2 large green peppers
1/4 cup chopped onion
1/2 cup chopped tomato
1 cup shredded cheddar cheese
salt and pepper to taste
oil for frying
How to Prepare:
Core and deseed the peppers. Boil in salted water for 5 minutes (for firmer peppers, don’t boil). Rub the insides with a generous amount of salt. Brown the onion and beef in the oil, and the tomato and cheese to the pan. Spoon the beef mixture into the peppers, and place the peppers standing up in a small casserole dish. Cook at 350 for 20-25 minutes.
