Sausage and cheese muffins

Effort: Easy
1 pound sausage
6 eggs — separated
1 cup atkins bake mix
1 teaspoon salt
1/2 cup mayonnaise
1/2 cup sour cream
4 ounces shredded cheddar cheese — or cheese of choice

How to Prepare:
Pre-heat oven to 375. Pam spray or grease muffin tin.(you can use papers, but I hate the way they stick to muffin!!)
Crumble and cook sausage, drain.
Seperate 6 eggs. Beat yolks, add 1 cup Bake mix, salt, mayo. sour cream, and cheese. Blend with a spoon.
Add sausage.
Whip egg whits untill stiff.
Gently fold whites into batter. Mix carefully (so as not to break down whites completely)
Spoon into muffin tins and bake for about 30 mins.
